South Beach Eggsadilla

An easy tasty breakfast that Kevin is enjoying...
1 tsp extra-virgin olive oil
3 large eggs, lightly beaten
1(8-inch) whole-wheat tortilla
2 ounces reduced-fat pepper Jack cheese, sliced
  Salt and freshly ground black pepper
Heat oil in skillet.  Add eggs and scramble until cooked but still moist, about 2 minutes.  Remove to plate, salt and pepper.
Replace skillet on heat.  Add tortilla and cook on both sides until warmed through, about 1 minute.
Leave tortilla in pan, top half w/cheese and then eggs; fold the other half over to form a quesadilla.  Cook on both sides until heated through, 1 minute more.  Cut in half, and serve.
Per serving(half of the quesadilla): 280 calories

That looks good and a perfect breakfast for Kevin and not time consuming to make. And you certainly have the eggs for it. Daddy would love it.

Candace, we eat a slight variation of this recipe all the time!! The kids love it. Can't go wrong with this.
