Hitting the target

I had my first gun class last Thursday night. This target was 25 feet away and I got ten shots from my revolver. What FUN!!! There are few things I love in the world better then shooting a gun.

South Beach Eggsadilla

An easy tasty breakfast that Kevin is enjoying...
1 tsp extra-virgin olive oil
3 large eggs, lightly beaten
1(8-inch) whole-wheat tortilla
2 ounces reduced-fat pepper Jack cheese, sliced
  Salt and freshly ground black pepper
Heat oil in skillet.  Add eggs and scramble until cooked but still moist, about 2 minutes.  Remove to plate, salt and pepper.
Replace skillet on heat.  Add tortilla and cook on both sides until warmed through, about 1 minute.
Leave tortilla in pan, top half w/cheese and then eggs; fold the other half over to form a quesadilla.  Cook on both sides until heated through, 1 minute more.  Cut in half, and serve.
Per serving(half of the quesadilla): 280 calories

Ok, you guys knew when I finally did get a horse, you would probably be bored w/alot of horse posts.  Well, here is a 7 minute video of my HoneyDew!  This is after he had been in the stall for almost a week because of snow and rainy weather.




After Travis carries in wood for a fire and Allyson and Kaleb do the chores, Daddy makes them all a cup of hot chocolate!
Allyson just finished studying birds in her science class...she loves birds!  She saw this woodpecker outside her window today and took this picture.

Pictures we took with our lovely new camera

This is the grist mill across the street from Alvin York's home. The water is a beautiful green color from the limestone in the area.

Eating ribs in a restaurant in Livingston. About 15 mins from our doll house. They smoke them on a smoker behind the restaurant. Very good!!

These two pictures were taken at the beginning of the almost mile-long easement to the 151 acres. We drove across the creek three times and bumped all of the way. We went in a 4-wheel- drive truck. Cars can't make it. The property is up this cove.

Daddy used the timer for this picture. Thank you so very much for our Christmas present. We were shocked when we opened it. It is so kind of all of you to give this camera to us and we will enjoy it for the rest of our lives. We love you all, daddy and mama
