Meat Loaf Wellington










This is Kristin's recipe that she so kindly shared with me. Kristin, I added onions and green peppers to the meat loaf and left out the parsley because I don't really care for parlsey.


I had one piece and Eric ate the entire rest of it. I made some red potatoes with sauteed onions and garlic and butter and also corn on the cob to go with it.

Eric ate the rest!!! Wow! So what did you guys think of it. I guess he liked it if he ate so much. I have never really been a fan of meatloaf, but I really liked this one. Looks like a great dinner.

I thought it was delicious, Kritsin! It was very filling tho with the bread on the outside. After one piece with potatoes and corn I was just stuffed. I literally felt sick watching Eric just keep eating the meatloaf until it was all gone. He said it was the most delicious meal he has ever eaten. HaHa!! Thank you so much for the recipe, Kristin! :)

Also....I really expected more shock that I actually not only COOKED something from scratch but I also photographed and posted it!!

I have to say when I first saw the picture and scrolled down to see who posted it I expected it to be Candace or Kristin. I did say to myself,"Katie posted this!!" I knew you had it in you,Katie. Can't wait for your next dish.

Good one, daddy. Hey, katie, I have the same 13x9 pan. I didn't even think about the recipe not being there because I know it so well. you could probably just upload the pics I sent.
